Refers to rice, peas or stew that may be burnt during cooking and is stuck to the bottom or sides of the pot. This crust is very enjoyable and tasty depending on the original ingredients used in the main preparation. Imagine the wonderful taste of the Coconut-oiled rice with ‘’Gongo-peas’’ (Wandu or Pigeon Peas) with a spicy meat stew; or an Arroz con Pollo
with a sprinkle of shrimps combined, then taste the Concolon from such a delicacy. This Calypso has created much reaction and admiration in various musical circles. The plot centers around a fellow now residing abroad, who is urging his mate to prepare his meal in a similar manner as his former girlfriend did . . . the Concolon manner. Many people derive a double meaning from this song. The internationally famous artist, Miguelito
Valdez developed a spontaneous interest in ‘’Concolon’’ when he heard it while passing through Panama. Meanwhile, the musical directors of Belafonte are contemplating its addition to this great artist’s Calypso repertoire.
